I would prefer to have the ability to secure an individual form that collects sensitive information, so the rest of the forms can have images that can be easily viewed.

Thanks for reaching out to Jotform Support. Jotform includes a range of security and privacy features, though most settings are managed at either the account level or the individual form level, depending on the feature. If you need extra protection for sensitive information on a specific form, the primary per-form option available is Form Encryption.
With Form Encryption, all submission data for that specific form is protected with end-to-end encryption, meaning only people with the access code can view the decrypted information. It’s easy to Encrypt your form. Here’s how:
1. In Form Builder, in the orange navigation bar at the top of the page, click on Settings.
2. Then, toggle on Encrypt Form Data.
3. In the Form Encryption window that opens, click on Verify with Google or enter your password in the Enter Your Account’s Password field, and click on Verify.
4. Enter a password or code in the Enter an Access Code to Encrypt Data field. This will be your access key for viewing submissions.
5. Next, put a check in the box to confirm you have agreed to the terms, and click on Enable Encryptions.
Encrypted forms use end-to-end encryption, so your access code is securely locked, even from us. If you lose or forget it, we won’t be able to recover your data. To stay safe, it’s a good idea to choose a code that’s easy to remember or store it somewhere secure.Reach out again if you have any other questions.
